- In a bowl place the egg yolk , a few drops of vinegar and pepper to taste.
- Mix very well and add a tablespoon of oil while stirring with the help of a fork until homemade mayonnaise sets .
Preparation of dietary mayonnaise
- In a pot place a glass of water with salt and pepper to taste . Bring to the fire and let it boil.
- In a bowl put the cornstarch and flour and dissolve these ingredients with a couple of tablespoons of cold water.
- Now place the pre-pot preparation with salt and pepper and stir with a wire whisk until the dietary mayonnaise thickens .
- Remove from heat, add mustard , oil and beat again.
- Add the lemon juice and beat again. Reserve in the fridge.
Preparation of potato mayonnaise
- Peel the potatoes and cut them into medium pieces. Boil them in plenty of water and when they are soft, remove and drain. Reservation.
- Blend the vinegar with the potatoes and the garlic clove.
- Then add the milk, salt and pepper to taste. Continue blending until the potato mayonnaise thickens .
