Mango, papaya and carob ice cream pie, suitable for coeliacs

When night comes and after dinner, you probably want to eat something sweet. Therefore, it is always good to have something to satisfy that need. However, for celiacs, the options are diminished, since celiac disease is a disease that is characterized by a chronic inflammation of the jejunum, caused by an intolerance to a set of proteins known as gluten. Therefore, they are restricted from selecting bakery and pastry products. Next, I will leave a frozen mango, papaya and carob cake, suitable for coeliacs .

 

Ingredients

 

For the base

 

  • 12 dried figs
  •  

  • 10 dates
  •  

  • 150 g of nuts
  •  

  • 2 teaspoons of carob flour
  •  

  • 1 pinch of sea salt
  •  

  • 1 lemon
  •  

For the filling

 

  • 1 papaya
  •  

  • 1 handle
  •  

  • 3 dates
  •  

  • 5 tablespoons of flax seeds
  •  

  • 1 lemon
  •  

  • 1 pinch of sea salt
  •  

  • 4 ripe strawberries or strawberries
  •  

  • 20 cm³ of water
  •  

Step by step development

 

  1. To make the base of the frozen mango, papaya and carob cake , wash the fruits very well and put the figs and dates to hydrate in warm water for 30 minutes.

  3. After 30 minutes, drain and squeeze the lemon to get its juice.
  4.  

  5. Place all ingredients in a processor and stir to form a dough.
  6.  

  7. Spread the dough in a removable mold covered with plastic wrap and take the freezer while continuing with the recipe.

  9. To make the mango pie filling , grind the flax seeds and squeeze the lemon to get its juice.
  10.  

  11. Hydrate dates with 50 cm³ of warm water for 10 minutes and cut the papaya and mango into pieces. If you wish you can reserve some for decoration.

  13. Take the magician and papaya in pieces in the blender along with the lemon juice, salt and dates with the liquid. Process very well until you get a consistent cream.
  14.  

  15. To make strawberry sauce , process strawberries and water until a sauce is obtained.
  16.  

Armed the cake

 

Remove the mold from the freezer and place the filling on the dough. Take the freezer again for at least two hours and decorate the dishes where you are going to place the portions of the cake. Garnish with a few pieces of papaya, mango and some mint leaves.
